Our ranch: Our ranch is home to over 10,000 trees of Italian, Spanish, and French varietals. We selected these varietals for our orchard to provide our oils with the most characteristic and distinct flavors. Our Spanish trees include Arbequina and Koroneiki. In our Italian grove, we have Frantoio, Leccino, Maurino, Pendolino, Ascolano, Taggiasca, Coratina and our French trees include Picholine, Bouteillan and Cailletier.
How we make extra virgin olive oil: Our olives are harvested by hand in the late fall, around thanksgiving. Friends and family come to our orchard and spend a day eating, drinking, and gathering buckets of olives paying close attention to the ripeness and health of the fruit. The size of the harvest varies from year to year depending on weather and other factors. A mobile olive mill is hired on site to extract the oil immediately. Unlike many commercial brands of olive oil, our extra virgin olive oils are extracted without heat or chemicals which maintains the highest level of the health benefits of the polyphenols and antioxidants in the oil. We bottle Olio Nuovo immediately for those who have acquired the taste for New Olive Oil - it is strong and pungent but so good for your health. Then the majority of the oils are then allowed to settle and to develop their flavors in large stainless steel drums for a month or two. The sediments are then purged and bottling is done as needed by hand in small batches for maximum freshness.
